Ingredients for 4-5 people: 1 kg
plenty of mussels and half breadcrumbs
plenty of parsley salt
black pepper 3 whole dried chillies
half a glass of white wine 1 clove garlic
Preparation :
First, put the mussels to drain a few hours before cooking.
To do clean them well and then put them to rest for at least 3-4 hours in a large bowl full of cold water to which you add 3-4 tablespoons of salt, and covered with a cloth so that they remain in the dark. After this time
rinse well and remove any that are open or are broken.
Pour the mussels into a clean pot with the wine, a little chopped parsley, red pepper and the chopped clove of garlic cut in half and clean.
Cook them over high heat for 5 minutes, closed with a lid, so that they open (those that are still closed at this point do not use them because they could be filled with sand) then shut off.
Mix the breadcrumbs with plenty of chopped parsley, a pinch of salt and black pepper.
Wet the bread crumbs with some of the mussels filtered the liquid to form a soft dough.
Take the mussels and remove the blank, then cover the mussels with a little bread crumbs.
Put the mussels in a pan, forming a single layer and place in preheated oven at 180 degrees and grill for 5 minutes.
Serve immediately.
