home-cooked radicchio, pine nuts and bacon soup
Prime tasty dish.
Ingredients for 4 people: 400 gr
homemade (or other short pasta)
70 grams of radicchio
120 grams of diced bacon
50 grams of pine nuts 1 shallot
40 g butter 200 ml cream
black pepper salt
Preparation:
Wash the radicchio and cut it into strips, then clean the shallots and Finely chop enough.
Cook the pasta in boiling salted water.
Meanwhile in a large frying pan fry the shallots in melted butter, then add the bacon and cook for 1 minute, then add the radicchio and cook, stirring for 2 minutes.
toasted pine nuts In a small saucepan over medium heat for 1-2 minutes (careful not to burn).
When it is cooked, add the radicchio cream and 5-6 tablespoons of pasta cooking water and simmer for about 1 minute, then add the pine nuts (keep aside for someone to decorate the platter) and a pinch of salt and black pepper and mix well.
Drain the pasta and toss in pan with the sauce for half a minute.
Place on plates and decorated with a few pine nuts.
